A trio of pattypans

We planted pattypan squash for the first time this year, and now that they’re maturing (in abundance!), we’re not quite sure what to do with them. Do we pick them when they’re small, glossy and still faintly green (my preference)? Or do we wait until they’re matte white and spaceship-shaped (Karl’s)? And how to cook them? We’re looking for ideas, and we’ll also be fiddling around on our own. Check back for our favorite recipes–in the meantime, any tips?

    When I belonged to a couple of CSA’s, they had patty pan squash, and they were picked when they looked like spaceships. I just used them like zucchini or summer squash – cut them up and steamed them or had them raw in salads, if I remember correctly. HTH some.

    we grew those several years ago (like 20) and I was too young to know what to do with them so we gave ‘em away. I still wouldn’t know what to do with them other than fry ‘em up. Like you, I am curious to read how others fix these cute patty squash.

    We love grilling them. Cut them in half (we tend to cut them the short way so they’re still thick and meaty in the middle with thinner ends that can get a little ‘crispier’ on the grill), brush with oil, season with salt, pepper, cayenne, anything..and grill until they’re a texture you like.
